Irish Rosemary Ginger Beer

Bless your hearts it's too hot outside! So it's time to go Irish for the day!

This Irish Rosemary Ginger Beer is just what you need to cool down the scorching summer days in the garden, on the balcony or wherever you find yourself.


This cocktail is a little on the sweeter side bit the spiciness of the ginger beer gives it a delicious kick on that hot summer's day. It also includes a home-made rosemary syrup, the recipe to which you can also find at the bottom of this post.



Ingredients

  • Fentimans Classic Ginger Beer rrel Irish Whiskey

  • ½ ounce Rosemary infused syrup

  • ¾ ounces lemon juice

  • Fentimans Classic Ginger Beer

Ingredients for the syrup

  • 1 cup of sugar

  • 1 cup of water

  • 2 sprigs of rosemary


How to:


Combine the whisky, syrup and lemon juice in a mixing glass with a scoop of ice. Stir. Add a few ice cubes in a large tumbler and strain the mix into the glass. Top off with ginger beer.


For the syrup, add the sugar and water to a pot and heat it up until the sugar is dissolved. Don't boil! Add two sprigs of rosemary for a few minutes. Leave in longer for a more intense flavour. The syrup can last up to a few weeks in the fridge.
